I don’t like drinking hot beverages.

Yes, that’s right – I am all about tea, yet hot drinks are not my thing!

Before you start wondering if you should trust someone who creates and sells tea, yet doesn’t drink it herself – WAIT! I never said that I don’t drink tea, just that hot tea is not for me…So, does that mean that I drink cold tea? Well, sort of.

On the odd occasion I decide that I am going to yet again test my preferences for hot beverages I do end up taking one sip of the hot brew and then forgetting all about it until it is stone cold. What I actually LOVE and enjoy is Sun Tea, or even a Cold Infusion. Here is a very basic guide on how to prepare these two unique types of tea – I use a 1 litre jar with a muslin cloth over the mouth for both methods:

COLD INFUSION

Use 30g of dried herbs in 1 litre of cold water and let it stand overnight. If you are using fresh herbs, then pack the jar at around ⅓-½ full then top up with water. You can also warm it gently to taste if you prefer. This ratio of herbs to water is a little more medicinal than Sun Tea, so it is great for therapeutic blends.

 

 

 

SUN TEA

This is a little like a cold infusion, except it is prepared at the strength of a tea. Add 4-5 teaspoons of dried herbs or 4-5 tablespoons of fresh herbs to 1 litre of water and let it stand in the sun for at least an hour. I like to think that the sun actually energises the active constituents in the herbs, and regardless of whether or not this is actually true, I feel like I am drinking sunshine with every sip. Now that has got to be good for you!
